Content and code are committed to your own Git repository as they are produced. Nothing is trapped behind an export button, and there is no proprietary format standing between you and your own site.
The platform itself is open source. Use the hosted version because it is convenient, not because you are stuck — the self-hosted path is a real, supported way to run exactly the same thing.
